Ingredients

  • 4 Tablespoons chia seeds
  • 1 cup milk of choice
  • 2 Tablespoons maple syrup or honey adjust to taste
  • 1 Teaspoon vanilla extract optional
  • 1/2 cup fresh or frozen blueberries
  • 1 Tablespoon fresh lemon juice
  • optional: boost your protein by adding one unflavored scoop of protein powder

For serving:

  • fresh blueberries
  • 1 Tablespoon lemon zest

Instructions

  • Add all the ingredients to a high-speed blender. Blend until smooth and creamy.
  • Taste. Add more sweetener or a little more lemon zest for brightness if needed.
  • Pour into the jars and refrigerate for at least 4 hours (or overnight) until thickened.
  • When ready to enjoy, give it a good stir and add blueberries on top (optional).
  • Store chia pudding in the fridge for up to 5 days.

I don't have a blender, can I make this recipe?
Yes! You can make Lemon Blueberry Overnight Chia Pudding without a mixer. Simply whisk all the ingredients together in a jar or bowl, let it sit for 10-15 minutes, then stir again to prevent clumping. Cover and refrigerate overnight (or up to 24 hours for an even creamier texture). The chia seeds will naturally absorb the liquid and thicken into a pudding-like consistency—no blender needed!
