Healthy Lemon Energy Balls

Ingredients

For the balls:

  • 1 cup almond flour
  • 1/2 cup desiccated coconut
  • 1/3 cup real maple syrup
  • 1/3 cup almond butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (zest of about 1 small lemon)
  • A pinch of salt

For coating:

  • 1/2 cup desiccated coconut

Instructions

  • In a food processor, combine the almond flour, desiccated coconut, maple syrup, almond butter, lemon juice, lemon zest, and a pinch of salt.
  • Process until a soft, slightly sticky dough forms.
  • Roll the mixture into small balls (about 1 tablespoon each).
  • Roll each ball in the extra desiccated coconut until fully coated.
  • Refrigerate for at least 20–30 minutes to firm up before serving.
