Ingredients

For the crust:

  • 1/3 cup crushed cookies or cereals like Graham crackers, Biscoff cookies, or high-protein cookies (for extra nutrition boost)

For the protein cheesecake filling:

  • 1 cup cottage cheese
  • 1 cup plain or vanilla Greek yogurt
  • 2-3 Tablespoons real maple syrup adjust to taste
  • 1/2 Teaspoon lemon zest optional
  • 2 Tablespoons instant vanilla pudding for thickness and flavor

Optional toppings:

  • Fresh berries, sliced fruit, extra crushed cookies, maple syrup drizzle

Instructions

Prepare the cookie crust:

  • Place cookies in a zip-top bag and crush with a rolling pin, or pulse in a food processor until you have fine crumbs. Set aside.

Make the high-protein filling:

  • In a food processor, blend cottage cheese and Greek yogurt until completely smooth (about 60 seconds). Add maple syrup, lemon zest, and pudding mix, then blend again until thick and creamy.

Assemble your cheesecake jars:

  • Spoon 1-2 tablespoons of crushed cookies into the bottom of each jar.
  • Add a generous layer of the protein cheesecake filling on top
  • Optional: Create layers by alternating crust and filling

Serve and enjoy:

  • Top with fresh fruit, extra cookie crumbs, and a drizzle of maple syrup. Perfect for grab-and-go snacking!
  • Keep refrigerated up to 5 days.
