Instructions
Prepare the cookie crust:
Place cookies in a zip-top bag and crush with a rolling pin, or pulse in a food processor until you have fine crumbs. Set aside.
Make the high-protein filling:
In a food processor, blend cottage cheese and Greek yogurt until completely smooth (about 60 seconds). Add maple syrup, lemon zest, and pudding mix, then blend again until thick and creamy.
Assemble your cheesecake jars:
Spoon 1-2 tablespoons of crushed cookies into the bottom of each jar.
Add a generous layer of the protein cheesecake filling on top
Optional: Create layers by alternating crust and filling
