Peanut Butter Protein Granola Clusters

Crunchy peanut butter protein granola clusters made in one bowl, no stirring, and meal-prep friendly! 10g protein per serving

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup mixed unsalted nuts of your choice such as cashews, pecans, or almonds
  • 1/2 cup vanilla protein powder
  • 1/2 cup real maple syrup
  • 1/4 cup peanut butter slightly warmed or almond or cashew butter
  • 1/4 cup coconut oil melted
  • 1 egg white
  • Pinch of salt

Instructions

  • Preheat the oven to 300°F (150°C). Line a 15” x 10” baking sheet with parchment paper.
  • Add all the ingredients to a large bowl and mix until evenly coated.
  • Transfer the mixture to the prepared baking sheet. Spread it into an even layer, then use a spatula or the back of a spoon to firmly press the mixture down. Don't just spread it loosely. Pressing the mixture together is what helps create those big clusters.
  • Bake for 40–45 minutes, or until golden and crisp. Do not stir...I know it's tempting! But if you stir it halfway through, you'll break up the mixture and end up with smaller pieces instead of those beautiful clusters.
  • Remove from the oven and let the granola cool completely on the baking sheet. Don't rush this step. The granola continues to firm up as it cools.
  • Once completely cool, break the granola into clusters and store in an airtight container.
