Sauce:
- 3 tablespoons BBQ sauce or ketchup or a mix of both
- 2 tablespoons soy sauce
- 1–2 garlic cloves minced or crushed
- 2 tablespoons sweet chili sauce
Stir Fry:
- 10-12oz (280-300 g) your favorite sausage (vegetarian works too) cut into bite-sized pieces
- 1 tablespoon cooking oil
- 1 small white or yellow onion finely chopped
- 1 red bell pepper coarsely chopped
- 1 green bell pepper coarsely chopped
- Optional: 1 jalapeño pepper sliced, for heat
- salt and pepper to taste
- For serving white rice
Instructions
- In a small bowl, whisk together the BBQ sauce (or ketchup), soy sauce, garlic, and sweet chili sauce. Set aside.
- Heat the oil in a pan or wok over medium-high heat. Add the onion and peppers and cook, stirring frequently, until the onion becomes translucent, about 5 minutes.
- Add the sausage and cook for 8-10 minutes, stirring occasionally, until browned.
- Pour in the sauce and stir frequently until it thickens and coats the sausage and vegetables, about 1 minute.
- Remove from heat, add salt and pepper to taste, and serve over white rice.
