Sauce:

  • 3 tablespoons BBQ sauce or ketchup or a mix of both
  • 2 tablespoons soy sauce
  • 1–2 garlic cloves minced or crushed
  • 2 tablespoons sweet chili sauce

Stir Fry:

  • 10-12oz (280-300 g) your favorite sausage (vegetarian works too) cut into bite-sized pieces
  • 1 tablespoon cooking oil
  • 1 small white or yellow onion finely chopped
  • 1 red bell pepper coarsely chopped
  • 1 green bell pepper coarsely chopped
  • Optional: 1 jalapeño pepper sliced, for heat
  • salt and pepper to taste
  • For serving white rice

Instructions

  • In a small bowl, whisk together the BBQ sauce (or ketchup), soy sauce, garlic, and sweet chili sauce. Set aside.
  • Heat the oil in a pan or wok over medium-high heat. Add the onion and peppers and cook, stirring frequently, until the onion becomes translucent, about 5 minutes.
  • Add the sausage and cook for 8-10 minutes, stirring occasionally, until browned.
  • Pour in the sauce and stir frequently until it thickens and coats the sausage and vegetables, about 1 minute.
  • Remove from heat, add salt and pepper to taste, and serve over white rice.
