Ingredients

  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup whole wheat flour
  • cups rolled oats
  • 1/2 cup coconut sugar OR ¼ cup granulated sugar + ¼ cup dark brown sugar
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pumpkin spice
  • pinch of salt
  • 1/2 cup dark chocolate chips (I used minis)

Instructions

  • Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk pumpkin puree, egg, and vanilla until smooth.
  • In a separate bowl, combine flour, oats, sugar, baking powder, baking soda, cinnamon, pumpkin spice, salt, and chocolate chips.
  • Add the dry ingredients to the wet ingredients and mix well. The dough will be very thick.
