Cheddar Jalapeño High-Protein Bites

Ingredients

  • 2 cups almond flour
  • 1/2 Teaspoon baking powder
  • 1 cup Greek yogurt
  • 1/2 cup shredded cheddar
  • 1/2 Teaspoon salt

Egg wash:

  • 1 egg + 1 Tablespoon water whisked

Toppings:

  • 2 to 3 Tablespoons shredded cheddar
  • 1 fresh jalapeño sliced and seeds removed

Instructions

  • Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together almond flour, baking powder, and salt.
  • Add the Greek yogurt and gently knead with your hands until a dough forms.
  • Fold in 1/2 cup shredded cheddar. Knead for about 1 minute until fully combined.
  • With wet hands, divide the dough into 10 small balls and place them on the baking tray, spacing them evenly.
  • Brush each ball with egg wash, then top with a sprinkle of cheddar and a slice of jalapeño.
  • Bake for 20–25 minutes, or until golden and set. LET IT COOL COMPLETELY before digging in.

Notes

Can I freeze them?
Yes! Let them cool completely, then freeze in a single layer. Reheat in the oven or air fryer at 350°F for about 5–7 minutes.
How spicy are they?
It depends on how many jalapeño seeds you leave in. For a milder bite, remove all the seeds and ribs. Want it hotter? Leave some in or add a dash of chili flakes.
