If your dates aren’t soft and juicy, soak them in warm water for 10 minutes, then drain
Toss the shredded coconut in a dry skillet over medium heat. Stir frequently and toast until lightly golden and fragrant. Remove from heat and let cool slightly.
Add the toasted coconut and all remaining ingredients to a food processor. Blend until a sticky dough forms. If the mixture feels too dry, add 1 teaspoon of nut butter at a time until it comes together. Scoop and roll into bite-sized balls. You should get about 12–14.
Enjoy immediately, or store in an airtight container in the fridge for up to one week.
