Coconut Date Balls (Samoa Cookie Inspired)

Soft, melt-in-your-mouth, and packed with caramel-coconut-chocolate vibes… just like the classic cookie we all secretly love.

Ingredients

  • 12–14 juicy Medjool dates pitted
  • 1/3 cup unsweetened shredded coconut
  • 2 tablespoons nut butter Almond, cashew, or tahini. You can also use peanut butter, but keep in mind it will create a stronger peanut flavor that may slightly overpower the classic Samoa taste.
  • A pinch of salt
  • 1 tablespoon cocoa powder
  • 1/2 cup almond flour

Instructions

  • If your dates aren’t soft and juicy, soak them in warm water for 10 minutes, then drain
  • Toss the shredded coconut in a dry skillet over medium heat. Stir frequently and toast until lightly golden and fragrant. Remove from heat and let cool slightly.
  • Add the toasted coconut and all remaining ingredients to a food processor. Blend until a sticky dough forms. If the mixture feels too dry, add 1 teaspoon of nut butter at a time until it comes together.
  • Scoop and roll into bite-sized balls. You should get about 12–14.
  • Enjoy immediately, or store in an airtight container in the fridge for up to one week.
