These Coconut Date Balls are my better-for-you take on those nostalgic Samoa flavors. They’re naturally sweetened with dates, gluten-free, vegan, and require no baking. Perfect for travel days, after-school snacks, or that 3pm “I need something sweet” moment.

As a busy mom and flight attendant, I love having little grab-and-go bites like these in the fridge. They feel indulgent, but they’re made with simple, wholesome ingredients.

Ingredients

  • 12–14 juicy Medjool dates pitted
  • 1/3 cup unsweetened shredded coconut
  • 2 Tablespoons nut butter Almond, cashew, or tahini. You can also use peanut butter, but keep in mind it will create a stronger peanut flavor that may slightly overpower the classic Samoa taste.
  • A pinch of salt
  • 1 Tablespoon cocoa powder
  • 1/2 cup almond flour
  • Optional 1-2 Tablespoons pure maple syrup or honey If you prefer your energy balls a little sweeter…

Instructions

  • If your dates aren’t soft and juicy, soak them in warm water for 10 minutes, then drain
  • Toss the shredded coconut in a dry skillet over medium heat. Stir frequently and toast until lightly golden and fragrant. Remove from heat and let cool slightly.
  • Add the toasted coconut and all remaining ingredients to a food processor. Blend until a sticky dough forms. If the mixture feels too dry, add 1 teaspoon of nut butter at a time until it comes together.
  • Scoop and roll into bite-sized balls. You should get about 12–14.
  • Enjoy immediately, or store in an airtight container in the fridge for up to one week.
