Ingredients

  • 1 can (about 15oz /425g) chickpeas drained and rinsed
  • 2 heaping tablespoons Greek yogurt or mayonnaise
  • 1/4 cup chopped green onion
  • 1 Tablespoon fresh lemon juice
  • 1/4 Teaspoon Dijon mustard
  • 1/2 Teaspoon onion powder
  • 1 flat Teaspoon curry powder
  • 1/4-1/2 Teaspoon salt or more to taste
  • black pepper to taste

Instructions

  • Add the chickpeas to a bowl and mash with a fork (keep it chunky or mash it smoother, depending on your preference).
  • Mix in the Greek yogurt, green onion, lemon juice, Dijon mustard, onion powder, curry powder, salt, and black pepper.
  • Stir until everything is well combined and creamy.
  • Taste and adjust seasoning (more curry, salt, or lemon if needed).
  • Serve on toasted bread, in a sandwich, wrap, or over a bed of greens.
