Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/2 Teaspoon baking powder
  • 1/4 cup coconut oil or unsalted butter melted
  • 1/4 cup maple syrup
  • 1 large egg
  • 1/3-1/2 cup dark chocolate chips
  • pinch of salt

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, mix together the almond flour, protein powder, baking powder, and salt.
  • In a separate bowl, whisk together the melted coconut oil (or butter), maple syrup, and egg.
  • Pour the wet ingredients into the dry and mix until just combined.
  • Fold in the chocolate chips.
  • Scoop the dough onto the prepared baking sheet, making 8 cookies.
  • Bake for 10–12 minutes, or until the edges are lightly golden.
